Roasted Tomatoes and Mozzarella

Something simple but beautifully executed here for those evenings entertaining. This is beautiful as a starter or side, cooked up by the brilliant @thegfgrocer on Instagram. Sweet and fiery honey paired with these deep roasted tomatoes and fresh mozzarella make this a winner. 

Cherry tomatoes
Balsamic vinegar
Olive oil
JD hot honey
Basil or mintMethod:
Cut cherry tomatoes in half, and put into a baking tray, drizzle with balsamic vinegar and oil and sprinkle with salt. 
Pop into the oven at 200c and roast for 15 minutes.
Once out of the oven place onto a plate, tear mozzarella over, scatter with basil or mint or both if you want, and top with yummy JD’s hot honey.
Perfect for summer bbqs and entertaining.
